Ingredients:
- 500
g (1 lb) belly pork or bacon part of pig or use a leaner
cut such as loin
Sauce:
- 2
tbs thick soy sauce
- 2 tsp sugar
- 2 tsp sesame oil
- 3 tsp red chilli oil
- 1 tsp salt
- 2 tsp water
- 8-10 cloves garlic, finely minced
How
To Cook:

Bring a
large pot of water to a rolling boil. Add the whole
piece of pork, let water return to boil, reduce heat to
a medium simmer, and boil until thoroughly cooked (
about 25 minutes). Remove from heat and set aside to
drain and cool. Keep the water simmering.

Combine
the sauce ingredients and stir well to blend flavor. Set
aside

Place
pork on cutting board. Using a very sharp knife, cut the
pork into very thin slices. If the meat has a layer of
fat, it should be cut so that each slice has a bit of
fat attached.

Bring
the pot of water back to full boil and gently add the
sliced pork to re-heat and further set the texture, then
remove immediately to a colander and drain.

Arrange
the hot sliced pork on a platter, then pour the sauce
evenly over the meat. Serve.
